2 tbsp. vegetable oil
1 cup all-purpose flour, or 1/2 cup all-purpose and 1/2 cup whole wheat
1 cup rolled oats
1 1/2 tsp. baking powder
1/2 tsp. salt
3/4 cup orange juice (preferably fresh)
1/2 cup chopped nuts or fruit (optional)
2 tbsp. butter
I didn't write down any directions, but mix until sort of lumpy -- not all the way to smooth, and cook in buttered skillet is always how pancakes work.
Edit: also, maple-pecan pie and gnocchi from thanksgiving, because they were all really good.
